4 Chicken thighs,bone and skin removed
2 Quarts water
1 lbs turkey Italian sausage
1 cup chopped onion
1 can stewed tomatoes
1 cup uncooked white rice
Sale & freshly-ground black pepper to taste
3 cloves garlic, minced
1 1/2 tsp thyme
1/4 tsp cayenne pepper, or to taste


How Do I Make Chicken and Turkey Sausage Jambalaya?

Here is how you make Chicken and Turkey Sausage Jambalaya:

Place chicken thighs in water in a heavy pot, and season with 1/2 tsp thyme, salt and pepper. Bring the water to a simmer and let the chicken simmer for 20 minutes. Don't boil hard or you'll try out the chicken. Remove the chicken from the pot to cool, and then cut into chunks. Strain and reserve 2 cups of the cooking liquid; empty the pot but don't clean it out.Remove the sausage from its casings, and put it into the pot with the onions, cooking until the sausage is cooked through. Pour off most of the excess fat, and then put add the rice and garlic. Cook the rice over medium heat until it just starts to swell and smell nutty.Add the stewed tomatoes and the reserved cooking liquid, and the thyme and cayenne. Bring the pot to a boil, add the chicken, and adjust the seasonings to taste. Reduce the heat to low and cook for 30-40 minutes, or until all of the liquid is absorbed. Share and enjoy!
