When I was older, I got impatient and discovered chicken breast works just as well. Also, we used to use sour cream, but putting greek yogurt in its place is just as tasty and -way- more healthy.

2 cans Campbell's Cream of Mushroom Soup
17.6 oz container of Fage Greek Yogurt Total 0%
1/2 or 1 tsp salt
Pam Spray
10-pack 8-10 inch Tortillas (Try to find the thickest flour tortilla you can - in Omaha, NE area, make sure to use Mi Mama's tortillas- they're the best!)
2 cups shredded yellow cheese (I prefer colby, but you can use any yellow cheese.)

Here is how you make White Chicken or Turkey Enchiladas:

Cook chicken by boiling it until done. Shred or cut chicken into small pieces (I just wait a bit until they're not so hot and use my fingers. Whatever you like!) Season as desired. You can add chili powder or Mrs. Dash or just a little salt or pepper. Whatever makes it yummy to you. Preheat oven to 350 degrees.In a medium bowl, mix condensed soup with yogurt and salt. Spray a cake pan with non-stick spray.On a plate, -generously- smear both sides of tortilla with cream mixture. Add 1/10 of your chicken into a line in the middle of the tortilla. Roll tortilla up and place it in the pan. Repeat with all tortillas.Pour remaining cream mixture onto the top of the enchiladas. Spread cheese evenly on top.Cover with aluminum foil. Bake at 350 for approx. 45 minutes or until all cheese in melted and the middle is hot. Remove aluminum foil and bake for another 15 minutes to slightly brown the cheese.
