Coat vegetables with 1T oil. Roast all vegetables, except mushrooms, on a cookie sheet at 425f for about 25 min. Cut chicken into bite sized pieces and saute in 1 T oil until cooked through. When vegetables are done, add to chicken mixture and saute for a few minutes. Add honey and mushrooms and garlic.
