Yum yum yum, I've just had this for dinner and I enjoyed it so much I thought I'd share the recipe. I whipped it up in about 20 minutes - chopping the veges as the chicken was cooking.It only uses 2 dishes so there's not much to clean up, which I like!My husband who "really doesn't like couscous" ate it all up and even had seconds. I like it when my veges are of a decent size so you get the flavour of them in the mouthful. I buy small mushrooms and small brussel sprouts so I can just cut them in half and they are the perfect bit size. You can have it for lunch or dinner or take the chicken out and it makes a great side dish for Steak. It's also very nice heated or cold for lunch the next day.

2 Skinless Boneless Chicken Breasts
2 oz (56g, 1/3 cup) Couscous - Herbed Chicken flavor by Near East is delicious
9 Green Beans
9 Brussel Sprouts
9 Button Mushrooms
1 Medium Green Zucchini
Brocolini or Broccoli
1/4 Red Onion
1 tbsp Oyster Sauce
1 tbsp Sesame Oil
1 tbsp Olive Oil - I use one infused with Roasted Garlic and Hot Red Pepper
Fresh Coriander (Cilantro)
1 oz (28g) Feta Cheese - optional, highly recommended, adds 10 calories per serving.
1 tsp Salt


How Do I Make Chicken and Vegetable Cous Cous?

Here is how you make Chicken and Vegetable Cous Cous:

Prepare coucous as per instructions on the packet but WITHOUT using any olive oil or butter.Cut the chicken breast into 1" x 1" cubes - its nice if the veges are a similar size too but as true to their shape as possible.Turn big element on as high as it goes and heat the olive oil in a large non stick frying pan. add the chicken. Cook chicken for about 8 minutes. I turn it frequently and then let one side go golden brown. I find if you try to brown all sides it'll end up dry. I grind some salt on the chicken at this stage. While chicken is cooking I cut up up the veges. You can put in anything you like, these are just my favourites. The brussel sprouts and mushrooms are a must!Tip cooked chicken in on top of couscous and use the same pan for the veges. Put them all in at once and add oyster sauce and sesame oil. If it gets a bit dry before the vegetables are cooked add a little bit of water to the pan. Mix the couscous and chicken back in to the vegetables. Add finely chopped cilantro and small cubes of Feta Cheese. Leave on the heat just long enough to heat the cousous back up (1 minute). The feta will melt ever so slightly, delicious.
