2 medium Zucchini
1 medium Onion
1 pint Cherry or Grape Tomatoes
1.5 tbsp butter (divided)

Here is how you make Chicken Sausage and Vegetable Gnocchi:

Cook Gnocchi to package directions & set aside.Slice the chicken sausage and add to large sautee pan over medium heat. Chop onion. Move sausage to one side the pan, add 1/2 tbsp of butter to the other side, when melted add onion & sautee until translucent. Cut tomatoes in half, add to pan & mix all ingredients together. Using a vegetable peeler, peel zucchini into very thin ribbons. Add remaining butter to the pan, once melted add the zucchini to the pan, pour white wine & allow to simmer until the alcohol smell cooks off.
