5cm of fresh root ginger, peeled and chopped
300ml of water plus another 4tbsp
4tbsp vegetable oil
8 chicken thighs on the bone, skin removed
1 onion peeled and finely chopped
5 garlic cloves, peeled and finely chopped
200g coriander, finely chopped
1 green chilli finely chopped
0.5tsp cayenne pepper
2 tsp ground cumin
1 tsp coriander
0.5 tsp turmeric
1 tsp sea salt
2 tbsp lemon juice

Here is how you make Gizzi Erskine's "Chicken in Weeds":

Serves 41) Put the ginger and the 4tbsp of water into a blender and blend until you get a paste. Heat the oil in a large heavy based pan and brown the chicken in batches. Leave to rest on a plate.2) Add the onion and cook slowly for about 10 mins. Add the garlic for the last few minutes of cooking. Pour over the ginger paste and stir fry until starting to brown. Add the fresh coriander, chilli, spices and salt to the pan and cook for a few more minutes. 3) Pop the chicken back into the pan with any juices from the plate. Add the water and the lemon juice, pop a lid on the pan and cook for 15mins. Turn the chicken and then cook for another 15mins. If the sauce is too thin for your taste, just cook with the lid off until it thickens up. The chicken should melt off the bone when it's ready.
