Prepare rice first, since it takes longest to cook.Rice - in a quart size pot, bring 4 cups of water to boil. Slowly stir in 2 cups of long grain brown rice. Bring to another boil. Reduce heat to low, cover and simmer for 40-45min.Chicken - cut chicken breast into small pieces, place to the side. Spray large skillet with Pam nonstick cooking spray. Saute onion and bell pepper over medium heat. Add Chicken Breast Pieces. Season with Mrs. Dash Salt Free Lemon Pepper, Garlic Salt, and onion powder to taste. Cook on low for 20-25min. Vegetables - In Large pot, bring 1 cup of water to boil. Add vegetables. Bring to another boil. Cover and simmer for 5-10min or until desired tenderness.Place 1/2 cup cooked rice on plate, add 1 cup of vegetable mixture, then add 1/2 cup of sauted chicken over vegetables. Serve with a dash of soy sauce or rice vinegar, if desired.To simplify the recipe, use a bag of frozen california vegetables (broccoli, carrots, cauliflower) It will save you approx. 10-15min in prep time.
