3 C 99% fat free chicken broth (low sodium)
1/2 C thinly sliced red onion
2-3 T minced garlic (or to taste)

Here is how you make Pressure Cooker Chicken and Vegetables:

Skin chicken, heat olive oil in pressure cooker (with lid off), season both sides of chicken with pepper, salt, and garden herb spice. Brown both sides of chicken in pressure cooker. Transfer chicken to basket and put back in pressure cooker. Add carrots, quartered potatoes, thinly sliced onions, and garlic. Pour chicken broth over chicken and vegetables. Seal pressure cooker and bring to 15 psi. Keeping at 15 psi, cook for 25 minutes. Release pressure using quick release valve. Transfer chicken and vegetables to platter and broth to bowl to drizzle over if desired. Enjoy.
