1 cup rinsed quinoa
2 cups water
1/2 cup carrot, thinly chopped
1/2 cup zucchini, thinly chopped
1/2 cup celery, thinly sliced
1/2 cup green pepper, chopped
1/2 cup cucumber thinly chopped,
1/2 cup tomato chopped
7 ounces chicken breast diced
1/2 cup ranch dressing
1 tbsp teriyaki sauce
dash of tabasco sauce (optional)
2 tbsp feta cheese (optional and calories not included)


How Do I Make Teriyaki Ranch Quiona with Vegetables and Chicken?

Here is how you make Teriyaki Ranch Quiona with Vegetables and Chicken:

Put water in a small pot. Bring to a boil, add quinoa stir and reduce to a simmer for 11-12 minutes or until all the water is absorbed. Meanwhile, steam the chicken. Lightly steam the carrots, celery, green pepper and zucchini until tender crisp, separate from the chicken. In small bowl combine ranch, teriyaki and tabasco sauce. When quinoa is done, combine all veggies including cucumber and tomatoes, quinoa and sauce in a large mixing bowl. Portion 3/4 cup quinoa/veggie mix onto each plate. Top with 2 oz of chicken. If desired top each plate with 1/2 tbsp feta cheese. Makes 4 servings of 3/4 cup quiona/veggie mix.
