Coat 13x9 inch baking dish with cooking spray. Cut chicken into 1/2 inch strips. Mix soup, shredded cheese and water in microwave safe bowl. Cook in micro for about 3 minutes or until all is melted and mixture is well blended. Pour 1/3 of soup mixture onto bottom of baking dish. Add veggies to remaining soup mixture.Stuff manicotti shells with chicken and place in baking dish. Pour remaining soup mixture over pasta covering completely. Sprinkle with parmesan cheese.
