2 Chicken Breasts (5 ounces each)
4 c Baby Spinach
1 c Zucchini
1 large Bell Pepper (yellow or orange)
1 c Mushrooms
1 tbsp Rosemary
2 tsp. Cayenne Pepper
2 tsp. Garlic
3 tbsp Balsamic Vinegar


How Do I Make Chicken and Veggie Saute?

Here is how you make Chicken and Veggie Saute:

Serves 2 Place the chicken breasts in a shallow dish. Pour the balsamic vinegar over the chicken breasts, sprinkle the cayenne pepper and garlic over the chicken. Flip the chicken over and do the same to the opposite side. Let sit for a couple of minutes. In the meantime, chop the zucchini, bell pepper and mushrooms into small bite-size pieces. Heat a skillet to medium heat. Chop the chicken into bite size pieces and place on the skillet. Cook until brown on both sides. Add mushrooms, zucchini and bell pepper to the skillet. Continue to cook until the vegetables become tender. Add all of the spinach (it will quickly cook down and look MUCH smaller than when you add it in). Sprinkle rosemary over all of the ingredients in the skillet. Serve hot. This dish also works well with some whole wheat pasta or brown rice. Some parmesan cheese sprinkled on top is also very good.
