1 Tbsp olive oil
2 chicken breast halves, cut in bite-size pieces
1 large onion, cut in wedges
1 cup carrot slices (about 2-3 large carrots)
1 stalk broccoli, cut in bite-size pieces (including stalk)
1 cup fresh snap green beans, cut in 3-inch lengths
3 medium mushrooms, sliced
1 clove garlic, chopped or pressed (or 1/4 tsp garlic powder)
Salt and pepper to taste

Here is how you make Janie's Chicken and Veggie Stir-fry:

Salt and pepper chicken pieces as desired. Heat olive oil in wok/skillet, and cook chicken almost to completion. Set aside, leaving olive oil in pan. To olive oil, add garlic, onions and carrots. Cook until barely tender. Add in broccoli, and cook 2 minutes more. Add green beans. When green beans are bright green, add chicken. Add mushrooms last, then remove the entire pan from heat as soon as they are tender. Salt and pepper to taste. Serve over a bed of brown rice, pasta, or noodles (not included in nutrition info). I accounted for a dash of salt and pepper with the chicken, as well as another dash of each with the vegetables.
