1 cup Couscous
12 oz Boneless, Skinless Chicken Breast
1/2 cup Fresh Red Pepper
8 Grape Tomatoes
14 spears of Asparagus
1 cup Broccoli
1 cup Green Beans
1 cup Peas
1/3 cup Pine Nuts
4 Medjool Dates
1 clove Garlic
8 Sprigs of Fresh Dill Weed (apprx.)
6 Fresh Mint Leaves
1.25 tsp Olive Oil
Kosher Salt, Fresh Ground Pepper, Red Pepper Flakes, Cinnamon, etc. to taste
1 cup Water or Chicken/Tomato Broth

*In the past, I have also added and enjoyed baby carrots, sundried tomatoes, and chickpeas.




How Do I Make Million Veggie Couscous with Chicken?

Here is how you make Million Veggie Couscous with Chicken:

Makes 6 generous servings- intended as a single-dish meal. 1. Cut up chicken into bite size pieces. Add Kosher salt, fresh gound black pepper and garlic powder to taste. Bake at 350 degrees until chicken is fully cooked. 2. While the chicken is baking, chop up all your vegetables into smaller-than-bite-size pieces. I like to essentially dice all my veggies so that each bite can include a variety of veggies.3. Bring 1 cup of water or broth (I like to use tomato broth) to a boil. Before the water comes to a boil, add spices to taste. I like to add red pepper flakes and just a bit of cinnamon. 4. Add 1 cup couscous to boiling water and stir quickly. Removev from heat and allow to sit for no more than 4 minutes or so. Transfer to a much larger pot. 5. Add in baked chicken, veggies, and any other desired ingredients. 6. Add a little bit of olive oil and more water or broth as needed to keep the couscous moist. 7. Place the (new, larger) pot over very low heat and mix all the ingredients well.8. Season to taste and enjoy. I enjoy homemade tzatziki with this dish. *The vegetables, etc. suggested in this recipe are just that- suggestions only. I find that "Million Veggie Couscous" is a great way to use up small amounts of fresh or frozen vegetables, and nearly any will do quite well. I like to add a lot of green vegetables, as well as red veggies, dried fruits and nuts, etc. to add a diversity of tastes and textures while also making for a colorful and asthetically pleasing dish.
