1 pkg Buitoni fresh linguine
2.5 Tbsp olive oil, divided
1/2 pkg fresh asparagus, trimmed
1 clove garlic, minced
1/4 c sliced red bell pepper
3.5 oz white wine
1 lemon
1 Tbsp unsalted butter
1 boneless, skinless chicken breast, cooked & diced
1 c thinly sliced zucchini (use a vegetable peeler)
1 c thinly sliced yellow summer squash
2 green onion, thinly sliced
salt & pepper


How Do I Make Spring Veggie Linguine with Chicken?

Here is how you make Spring Veggie Linguine with Chicken:

Preheat oven to 400. Begin boiling a large pot of water for pasta.Toss asparagus with 1/2 Tbsp olive oil, then season well with salt & pepper. When the oven is preheated, put the asparagus in the oven and cook for about 5-10 minutes, depending on the thickness of the asparagus. You want it tender, but still al dente.Remove the zest from the lemon and set aside.In the meantime, heat 2 Tbsp olive oil over medium heat. Add the garlic, then the bell pepper slices. Cook for a minute, until the garlic is fragrant, but don't let the garlic start to brown! Add the white wine, and the juice of the lemon. Add in the chicken breast, zucchini, and summer squash and season well with salt & pepper. When the asparagus is finished, slice it into about 2" pieces, and add it to the other veggies and chicken. Add the butter and stir until it is well incorporated. Reduce the heat to low, salt the pasta water, and start cooking the pasta (it only takes 2-3 minutes). Just before you drain the pasta, use a measuring cup to get some of the cooking liquid from the pot. Drain the pasta, and add immediately to the pan with the chicken and vegetables. Toss gently to coat the pasta with the sauce, adding some of the cooking liquid as necessary to keep the pasta from sticking to itself and being too dry.Makes 5 servings.Number of Servings: 5Recipe submitted by SparkPeople user SNARKMEISTER.
