Chicken Breast, no skin, 2 breast, bone and skin removed
1 cup, Zucchini, sliced
1 cup, Baby Carrots, raw,
1 cup, Mushrooms, fresh, pieces or slices
1 cup, Green Peppers (bell peppers), strips
1 cup, Peppers, sweet, red, raw, sliced,
small handful cherry tomatoes cut in half.
Rosemary, dried, 1 tsp (approximate)
Thyme, ground, 1 tsp (approximate)
Salt, 2 dash (to taste)
Pepper, black, 1 tsp (to taste)
1 cup Arborio Rice (Risotto Rice), Dry, Uncooked,
4 cup (Chicken Broth, (8 fl oz)


How Do I Make Wendy's Chicken and Veggie Risotto?

Here is how you make Wendy's Chicken and Veggie Risotto:

Heat olive oil in extra large skillet on medium heat. Cut raw chicken into bite sized pieces and stir fry 8 mins (or until no longer pink and has a bit of brown color). Heat chicken broth in sauce pan on low heat to gentle simmer.Add mushrooms and stir fry for 3 - 4 minutes.Add carrots and peppers and stir fry for 3 - 4 minutes.Add Zucchini and Tomatoes and stir fry for another 2 to 3 minutes.Add spices, salt and pepper, stir to distribute evenly.Add 1/2 cup of chicken broth with a ladle.Add rice and stir to distribute. Keep stirring until rice is slightly opague.Add 1 cup of broth at a time with the ladle. Stir in one cup at a time until the rice has absorbed all the liquid. Keep adding broth until the rice is soft and fully white, but not mushy.Serve hot.You can add Parmesan Cheese to this as well, but that will add some calories.
