heat oil in cast iron skillet. season chicken as desired. cook until browned on both sides. mix together Italian dressing, honey, and balsamic vinegar. Pour half over chicken; cook another 10 minutes, turning once. Remove chicken from pan; keep warm. add green beans, peppers, and carrots to pan and cook until softened. Divide veggies between 2 plates; place chicken on top. Pour remaining dressing mixture into pan and bring to boil. Boil 1 minute until thickened.
