What Are The Ingredients For Chicken Dijon with Veggies Recipe?

The ingredients for Chicken Dijon with Veggies are:

1 chicken breast, skinless, boneless. Cut how you wish - chunks, strips, or leave whole breast. Flatten.

1/4 tsp black pepper
2 tsp olive oil

1/2 cup chicken broth (or water if you are trying to go lower sodium, if so add Kosher or Sea Salt to taste)

2 medium carrots, sliced
1 medium zucchini, sliced
1/2 medium red bell pepper, cut in strips
1 medium garlic clove
1/2 cup milk (you can use fat free, 1% or 2% if you want)
2 Tbsp Wondra flour
2 Tbsp unsalted butter
1 tsp Dijon mustard (low sodium available)
1 tsp dried Parsley or 1 Tbsp fresh snipped
10 medium length, thin asparagus spears. Trim bottom fibrous inch. Cut into 1" chunks if desired.


How Do I Make Chicken Dijon with Veggies?

Here is how you make Chicken Dijon with Veggies:

- Prep all veggies. Flatten chicken breasts (*see tips), cut up if desired.- Sprinkle both sides of chicken with black pepper (salt if desired*). Press seasoning in with fingers so it adheres well to the chicken and doesn't just fall off.- In a large high sided pan/skillet, heat oil over medium-high heat, swirl to coat bottom of pan. Add garlic and saute a minute or two (it will soften slightly and the aroma will come out beautifully).- Add chicken to pan. Cook about 2 minutes on each side. It will NOT be done at this point.- Stir in broth or water. Add carrots, asparagus, and bell pepper. Cover and cook about 5 minutes.- Add zucchini*, cover and cook another 3 minutes or so until veggies are tender and chicken is cooked through.- Using a large slotted spoon, remove chicken and vegetables from pan to serving dish/large bowl; retain as much liquid in the pan as possible. Cover bowl to keep food warm.- Add butter to pan of liquid. While that melts, measure milk into large measuring cup; whisk mustard into the milk in the cup. Pour milk/mustard mixture into the pan. Bring to simmer over medium-high heat, whisking occasionally.-Cook 2-3 minutes, or until thickened, whisking occasionally. - Pour sauce over chicken and vegetable medley.* Toss to coat. Sprinkle Parsley on top., approx 1/2 cup, bit more maybe
