6 Bell peppers, enough to cover whole bottom of cookie sheet.
We used the little bell peppers of all colors you can buy in a bag which is one pound of peppers total, we buy ours at costo.

.50 cup extra virgin oil.
This is a guess, as it is used at different times and I did not measure this when we made it.
8 miniture yams, you could use 3 regular size yam or sweet potato.

3/4 cup papaya nectar.

Firstusing a basting brush cover the bottom of your cookie sheet and your 13 inch baking dish with extra virgin olive oilnow cut the pepper in half (if using minitures) and in strips if using full size, try to use all the colors, red, yellow, green and orange, more vitamins this way. Place the cut peppers on the cookie sheet.combine the herbs, and sprinkle on top the pepperslightly and I do mean lightly drizzle virgin old on top of peppers, if you miss some that is fine, this is just to give the tops mositure from the heat.Heat oven to 350 and place the peppers in the oven for 10 minutes. While the pepper are now cooking, Place the chicken breat into the baking dish, pour in your papaya juice aournd the edges. cut your yams into long slice or round slices whatever shape you desire, and place on top of chicken, try to put some on the glass you can still see. Then cover with remaining spices if you have any. Place cooked peppers on top chicken, bake for 350 for one hours or until chicken is done. We serve it with fresh english cucumbers on baby bib lettuce and fresh papaya. For the dressing we use the papaya nectar. this really is simple, I probalbly made it sound more complicated, It really is delicious. my friend suggested adding barley or orzo to get grains to it, and using yogurt for dressing to get in diary, We have not done this yet, This is really really good.
