2 Tbsp. of McCormick's Montreal Roasted Garlic Chicken Seasoning (May need more season if desired -chicken needs to be heavily coated)


Veggies
1 C Chopped Green Peppers
1 C Chopped Red Peppers
2 Tbsp. Chipolte Seasoning or Real Peppers


Sauce
1.5 Cups of Non-Fat Milk
2 Garlic Cloves (Minced)
1 Tsp. All-Purpose Flour
1 Cup of Parmigiano-Reggiano Cheese
2 Tbsp of Light Cream Cheese(I prefer Smart Balance)
2 Tsp. of Pepper
2 tbsp. of Butter (I prefer I Can't Believe it's Not Butter Light)
1/2 C. Fresh Spinach Chopped


Pasta
16 oz. of Racconto 8 Whole Grain Penne Rigate

Here is how you make Stacey's Healthy Whole Wheat Chicken and Veggies Alfredo:

Cook Pasta according to directions on box. DrainWhile pasta is cooking heat a medium skillet over medium with cooking spray. Cut tenders into chunks and heavily season. Cook chicken until no longer pink inside.Heat 1 tsp. of olive oil in a skillet and add peppers. Season peppers with Chipolte Seasoning. Cook peppers until fully sauteed, make sure they are tender. (remove from heat and keep warm)Melt butter in a medium saucepan over medium heat. Add garlic and cook for 1 minute and stir frequently. Stir in flour. Gradually add milk, stirring with a whisk. Cook 6 minutes or until mixture thickens, stir constantly. Add 1 cup of Parmigiano-Reggiano, Cream Cheese, Pepper, Spinach and Salt. Stir with a whisk until cheese melts.
