1/2 tsp Olive Oil (or save calories by using an olive oil spray)
1/8 tsp Chili Powder
1/4 tsp Ground Cumin
Salt and Pepper to taste
6 Leaves of Bib Lettuce
2 Tbs Store Bought Salsa (no sugar added is best, home made is even better!)
1/2 Cup Black Beans (canned), rinsed, drained, heated

Here is how you make Chicken Fajita Lettuce Wraps:

Place all ingredients into a zip-lock bag (or a bowl) and mix thoroughly to coat. If you are using an olive oil spray, don't put any into the bag, just spray it directly onto your skillet.Dump the mixture into a skillet that's been preheated over medium-high heat. Saute, stirring frequently, for 7 or 8 minutes, till the chicken is no longer pink and the juices run clear and the veggies are crisp tender. Season to taste with salt and pepper.Meanwhile, heat the black beans in the microwave or a small saucepan. You can sprinkle a little ancho chili powder on them to give them some flavor if you desire.Rinse and dry the bib lettuce. Place 2 tablespoons of the black beans onto the lettuce. Add 2 tablespoons of the fajita mixture. Top with a dollop of salsa.
