Boil chicken breasts for 20 - 25 minutes, or until cooked through. Shred chicken. Heat olive oil in skillet. Add zucchini; season with salt and pepper. Cook until crisp-tender, about 6 - 8 minutes. Add canned and fresh tomatoes, chicken and basil. Simmer, stirring occasionally, for 20 minutes. Add cheese; season with salt and pepper. Cook for an additional 2 minutes.
