A mild curry. I added some dried sumac I had recently purchased at an ethnic market; adds just a little something extra. The seems a bit protien-heavy to me, so next time I'd probably add twice the veggies. Serve over rice or couscous and top with your choice (we have greek yogurt, banana, flaked coconut and preserved walnuts)

1 T canola oil
1 T dried onion flakes
2 t. curry powder
1/4 t cinnamon
1/2 t sumac powder
1/4 t salt
1/2 c dried apricots, sliced into strips
1 small box raisins (1.5 oz)
1 T peanut butter
1/2 c diced carrots
2 medium zucchini, sliced into 2" long wedges
1 can coconut milk (13.5 oz)

Cut each chicken breast into 4 to 6 similar sized portions. Heat oil in a large, deep skillet. Sear chicken on all sides over medium high heat.(You can save time by preparing remaining ingredients while the chicken is searing). Add onions and spices, stirring to coat as evenly as possible. Add dried fruits, carrots and zucchini. Cook for about 3 to 5 minutes. Add coconut milk, then reduce heat to low.
