Here is how you make Nicole's Tofu-Black Bean Chili:

Makes 2 servings1. Cook 1 Cup brown rice2. Cook onion, peppers, garlic, and carrots in olive oil on medium-low heat 3 minutes, add crumbled tofu and cook another 4 minutes3. Add Mirin and Bragg's, turn heat to medium-high and cook another 2 minutes.4. Add tomato sauce, black beans and water and continue to cook on med-high for 4 minutes. 5. Turn off heat, add vinegar and stir. Let stand for 5 minutes and serve hot next to or over rice. Tastes great with sliced cucumber as a side.
