A very yummy, heart-warming chili for vegetarians, vegans, and all others alike. One doesn't have to be a vegetarian or vegan to thoroughly enjoy this meal. If you want your carnivorous friends, family, and significant others to share in this spectacular meal with you, just don't tell them that it's not real ground beef. Unless they know that it isn't, they will never be able to tell the difference. If you're not vegetarian or vegan, but want the health benefits of the vegetarian "meat" then you can use beef broth (low sodium is best) for more of a beefy flavor. Before I became a vegan, I did this.

The ingredients for Vegan Black Bean Chili are:

1 - 15 oz. can - Black beans, low-sodium, drained & rinsed

1 - 14.5 oz. can - Italian Diced Tomatoes, drain, reserve liquid

1/2 - Red Bell Pepper, Large (approx. 1 cup)

1/2 - Green Bell Pepper, Medium (approx. 1/2 cup)

2 tbsp - Hodgson Mill Milled Flax Seed

2 tbsp - Dehydrated Onion Flakes (approx)

1 1/2 tsp - Chili Powder (approx)

1 1/2 tsp - Garlic, minced in water (1/2 tsp = 1 clove fresh)

1 1/2 C - Water

3 C - MorningStar Meal Starter Crumbles (= 3/4 ground beef)


How Do I Make Vegan Black Bean Chili?

Here is how you make Vegan Black Bean Chili:

In large saucepan, or skillet, saute peppers with minced garlic (& onions if using fresh) using Pam cooking spray over Medium-High heat. When cooked to desired texture, add drained tomatoes to pepper mixture. Briefly saute w/ peppers for a little extra "roasted" flavor. Lower heat to Medium. Add reserved liquid from tomatoes. Add 1 cup water. Add black beans. Add seasonings, onion flakes, and milled flax seed. Add last 1/2 cup water. Add meal starter crumbles. Stir frequently for approx. 20-30 minutes or until heated throughout.Serve with brown rice. I used Uncle Ben's Whole Grain Medley, Vegetable Harvest. However, I would recommend the Sante Fe version. I was unable to use mine due to a problem with the packaging. The flavors will blend better. I had to improvise at the last minute!It would be great to add more veggies and fresh herbs for enhanced flavor and nutrition. Corn would be a natural choice, as well as many others. Fresh onions would add a little extra pizzazz, too!This recipe makes 4 3/4 cups. I estimated it to approx. 5 servings. Could be more or less depending on appetite. I serve anywhere from 3/4 cup to 1 cup for a serving. At 3/4 cup, it's about 6 1/3 servings. At 1 cup, it's 4 3/4 servings.Number of Servings: 5Recipe submitted by SparkPeople user DBRISCOE79.
