Here is how you make Vegetarian "Beef and Bean" 1-Point Chili:

In a large soup pot, heat the oil. Add diced onion, celery, bell pepper. Saute for about 5 minutes, then add the chili powder and cumin. Saute until fragrant and onion is translucent. Do not burn the spices. Add 1 can of tomatoes, scraping up any bits stuck to the bottom of the pot. Stir in zucchini, squash, remaining 3 cans of tomatoes, broth, and kidney beans.Simmer for about 20 minutes partially covered. Add 12-oz. package of frozen meatless "ground beef" and stir just until grounds are heated through. (Do not add meatless grounds until the very end.) Turn off heat and let sit to blend flavors.
