* 2 cups canned beans (2 cans--any kind white, pinto, black)
* 1 lb ground ground turkey (or tvp/veggie crumbles for veg)
* 2 cups uncooked white rice (or brown rice if your house eats it willingly)
* 1 red onion - chopped
* 3 cloves garlic - chopped
* 2 Tbsp olive oil
* 1 to 2 Tbsp chili powder
* 1 can of tomatoes (14 oz) ( i like to blitz them in the food mill first)
* 1 fresh Jalapeno pepper (optional-- its a nice heat though)
* Salt
* 1 teaspoon sugar or agave nectar
* 1 bunch of fresh cilantro leaves

Here is how you make Chili Beans:

Makes 4 hearty servings (adapted from Simply Recipes)Use your preferred method of cooking the rice-- start the rice while you cook the beans.In a large skillet, saut? onions and garlic in 2 Tbsp of olive oil until translucent on medium high heat. Add ground meat (or meat substitute--can add frozen crumbles easily) and brown turkey gently.Add chili powder to meat as it is cooking. Depending on the spice level of your chili powder you may want to add more. Start with a heaping spoonful and adjust to taste.Add a handful of chopped cilantro, tomatoes, Jalapeno pepper, salt and sugar.Rinse the canned beans and add to mixture adding another teaspoon of salt to the beans as they go in.Simmer for 5-10 minutes, tasting and adding more salt if needed to taste.
