4 tablespoons chili powder
1 tablespoon ancho chili powder
1 tablespoon ground cumin
1 tablespoon Kosher salt

Here is how you make Eileen's Low Fat Chili with Beans:

Mix together chili powders, cumin, all-purpose flour, salt, and pepper and set aside.Chop all vegetables leaving garlic by itself.Spray a large dutch oven with olive oil spray and place over medium heat. Saute onion, celery, and peppers until softened. Add garlic and stir until fragrant. Increase heat to medium-high, add 1 to 2 tablespoons olive oil and add meat. Stir and cook until meat is lightly browned. Add spices and flour and stir for a minute or two to combine. Add tomatoes, water, and tomato sauce. Bring to a boil and then reduce the heat to a simmer. Simmer for 45 to 60 minutes, partially covered. Add beans (drained but not rinsed) and once up to temperature, simmer for another 30 minutes.Serve with choices of sliced scallion, chopped jalapenos, shredded cheddar cheese, sour cream or Greek yogurt, and cilantro.Serving Size:?Makes 16 servings of 1 1/2 cup each
