In a large soup pot or Dutch oven, heat oil over medium heat. Add onions and garlic, and cook 5 minutes, stirring frequently until onions are translucent. Season with salt to taste, then bring to a boil. Reduce to a simmer, cover and cook for 30 minutes, stirring often, until flavors have melded and sauce is thickened and bubbly. Stir in cilantro and hot pepper sauce, if desired.
