How Do I Make Homemade Beef Chili with Vegetables?

Here is how you make Homemade Beef Chili with Vegetables:

Brown the ground beef on med-high heat in 1 tbsp olive oil. Add a little salt and pepper, and then the onions. Saute for a couple of minutes, until onions are translucent.Add both cans tomatoes, both cans kidney beans, and the tomato paste (and one can water if it is too thick). Stir until blended.Add chili flakes, okra and celery. Stir the veggies in. Reduce heat to low and let simmer for about an hour, stirring occasionally.Slice and add zucchini about 15 minutes before end of cooking time (so it doesn't cook down to nothing before the chili is done). For a different flavour, try sauteing the zucchini slices until soft in a little olive oil or butter before adding to the chili.Serve with fresh rolls, and top with shredded cheddar and sour cream (in whichever low/no-fat variety you prefer).Makes about 8 servings.Number of Servings: 8Recipe submitted by SparkPeople user BASKINGLIZARD.
