Heat 1 tbsp of Extra Virgin Olive Oil over medium heat. Cook the onion and garlic until they begin to brown. Add in the beef and cook through. Drain the fat. Add in diced tomatoes and paste, kidney and pinto beans. Add in 2 tbsp of cumin, 2 tbsp of chili powder, 2 bay leafs, 3 whole cloves. Salt and pepper to taste. Heat to a strong simmer; reduce heat and cover; simmer for at least two hours. Makes about 10 1-cup servings.
