1 tablesppon light olive oil
6 oz - Ortega chopped green chilis
1 white onion chopped
3 garlic cloves
2 teaspoons cumin
1 teaspoon salt
1 teaspoon pepper
12 - corn tortillas
1 can Las Palmas Green Enchilada Sauce
6 cups of shredded Monterey Jack cheese
13 x 9 glass baking pan

Here is how you make Green Chili Enchildas:

Makes 6 - 8 servings/12 enchiladasChop chicken into small chunkscook over medium heat with olive oil, fresh garlic, onion, green chilis and all seasonings. Cook until until all pink is gone and chicken is browned. Let cool. Once cooled chop until minced the chicken, green chili and onion mixture. Scoop one ladle full of enchilada sauce into the bottom of glass baking dish. Spread sauce around. Roll meat mixture and a pinch of Jack cheese into each corn tortilla and place into glass dish open side down. Repeat untill all tortillas are used.
