this recipe came up on my google reader, i really wish i remember where from! this is an attempted "knock off" to the infamous "skyline" franchise! (those who have not had skyline - you are missing out!!!) you can probably make a couple swaps to make it a bit healthier, because it's not the most "diet-friendly", but so long as your serving size is under control, it's good stuff - enjoy! :)

1 (14.5oz) can beef broth
2 (8oz) cans tomato sauce
1 (15.5 oz) can kidney beans
? cup chili powder
? cup unsweetened cocoa powder
1 tsp cumin
1 tbsp cinnamon
? tsp allspice
? tsp ground cloves
1 whole bay leaf
? tsp salt
To taste (10 cranks) fresh black pepper
1 tbsp. granulated sugar
1 lb. thin spaghetti
2 cups shredded cheddar

Here is how you make Cincinnati Chili aka Home-made Skyline!:

STEP 1: In a large pot, cook half of the diced yellow onion in 1 Tbsp of olive oil until it is soft and transparent. Add the ground beef and cook until it is fully browned and the juices are clear. If you are using a higher fat content beef (more than 7% fat) drain off the excess fat before proceeding to the next step.STEP 2: While the onion and beef cook, gather all of your spices so they are ready to add to the pot (chili powder, cocoa powder, cinnamon, cumin, allspice, cloves, bay leaf, salt, pepper and sugar).STEP 3: Once you have the spices gathered and measured out, add them to the beef along with the beef broth, tomato sauce and kidney beans (with the liquid from the can). Let this mixture simmer over low/medium heat for 30 minutes to blend the flavors and thicken (the chocolate and bean liquid will help thicken it up). Stir the mixture occasionally.STEP 4: While the chili is simmering, boil the pasta according to the directions on the box. To serve the chili, place pasta on a plate or bowl, top with about 1 cup of chili/meat sauce, 1/4 cup of shredded cheese and a some of the remaining diced onion.
