2 10oz cans rotel
2 15.25oz cans black beans
1 3/4 cup tomato puree (approx half of a 29oz can)

cut up the celery and onions. put a large pot onto your stove and set temperature to med-high. throw in your meat to brown, and add the onions and celery, as well (cooking the vegetables while browning the meat will help the vegetables get a head start :)). do not drain. once the meat is no longer pink and cooked through, sprinkle chili powder over entire concoction (i use approx 2-3 tbsp, then add more later if necessary). stir thoroughly. add remaining ingredients (DO NOT DRAIN BEANS). bring to boil, then cover and simmer for 3 hours - stirring occasionally. makes 10 very generous servings!*dress it up with 2% shredded cheese, fat free sour cream, or top with your favorite crushed up whole grain cracker!Number of Servings: 10Recipe submitted by SparkPeople user AFORKINTHEROAD.
