I was craving chili but only had a pound of Lamb in the freezer. So I decided to try it instead of ground beef or turkey although this recipe would be good with either. It came out soooo amazing and I was able to freeze it for dinner another night. I think it might have even been better the next day as leftovers! Omit the meat all together and it would be an excellent vegetarian chili. I'm sure you could even adapt this for a slow cooker.

The ingredients for Jordo's Lamb Chili are:

1lb ground lamb
1 Tbsp Olive Oil
1/2 large onion diced
4 cloves garlic minced
1 Jalepeno pepper minced with seeds and membrane
1 Tbsp tomato paste
1/2 Cup wine (I used a reisling)
Salt & Pepper

1 Red Bell Pepper diced
1 can crushed tomatos
1TB brown sugar
1 TB Worcestershire
Few dashes liquid smoke

SPICES:
1/2 tsp Coriander
1 tsp Cumin
1/2 tsp Cinnamon
2 Pinches Crushed red pepper flakes
1 Tbsp Oregano
1 Tbsp. Parsley
1 tsp. Basil
2 Bay leaf
1 tsp. chili powder
1/2 tsp ground Chipotle or 1/2 whole chipotle pepper
Salt & Pepper

1 Can Red Kidney Beans
1 Can Black Beans
3 cups Chicken/Vegetable Stock or to desired thickness


How Do I Make Jordo's Lamb Chili?

Here is how you make Jordo's Lamb Chili:

In a dutch oven or other large cooking pot heat oil over med-high heat. Add the Lamb, Onion, Garlic, Jalepeno and cook until meat is browned. Add the Tomato Paste and cook about 2 minutes. Add a nice splash of Wine to deglaze the bottom of the pot and scrape up all the browned bits. Add the Bell Pepper, Crushed Tomatoes, Brown Sugar, Worcestershire and Liquid Smoke followed by ALL the spices which you can adjust to your liking. If you like it hotter add more crushed red pepper flakes or chipotle. Add the Kidney and Black Beans followed by the chicken or vegetable stock. Simmer over high heat until mixture comes to a boil. Reduce heat to low and simmer about 45-60 min or until desired thickness. Serving Size:?8-10 1 cup servings
