Canned Tomatoes, 1 can (Diced best)
*Chick Peas, 2 cup (We use 1 can, drained and rinsed)
Beans, red kidney, 2 cup (We use one can, dained and rinsed)
Onions, raw, 1 medium - (or half of an extra large as we buy them), Chopped chunky
Green Peppers (bell peppers), 2 cup, chopped (chopped chunky) About 1 large pepper or 2 small peppers.
Yellow Sweet Corn, Frozen, 1 cup kernels
Chili powder, 6 tbsp (estimate - add to taste)
Pepper, black, 2 tbsp (estimate, again to taste)
Light Beer, 0.25 can or bottle (12 fl oz) (if you don't have beer, wine may work. If all else fails, you can leave this out!)
Tomato Paste, 1 can (6 oz)
Zucchini, 1 cup, sliced (you wouldn't guess this to be a meat replacement but slice it into think slices lengthwise, then thin slices cross-wise, into tiny slivers. It will give the chili a meaty texture once cooked)
Hot Pepper Sauce, 3 tsp (to taste)
Salt, 3 dash (one on the onions and peppers when sauteeing, one once all the vegatables are in and one at the end to taste)

How Do I Make Charbonneau Chili?

Here is how you make Charbonneau Chili:

Add a tiny bit of oil to a large pot. As it heats, add chili flakes. Add zucchini, onions and green peppers when hot and dash of salt. Begin to sautee. While cooking, open cans of beans and tomatoes. When zucchini, onions and peppers are tender, add some black pepper, and then stir in all the beans, tomatoes, corn, some chili powder, hot sauce, and beer if you have it. Heat to boiling, and reduce to a light simmer to let it cook a bit (est 20 minutes). Add Tomato paste, and additional salt, pepper and chili powder to taste. Heat to boiling, and reduce to light simmer for additional time, but would be ready to eat as soon as the chili consistency is there, and it's good tasting to you. Leave it for extra hours if you want that good slow cooked chili flavor. Makes 6 cereal bowl servings of about 1.5 cups each. Number of Servings: 6Recipe submitted by SparkPeople user NIACAPPS.
