This is something I threw together one night that has turned into a "go to". It's a great source of protein, and a stellar one to freeze for another time or to pack up as lunch. What really makes the recipe work is adding your personal flavor to it -- I suggest a number of spices, but you can add as much as you want and adjust it to your taste. Remember, spices are awesome because they add FLAVOR without adding fat and calories!

* Ground beef, lean, 20 oz (1.5 lbs)

* Beef, top sirloin, 3 oz

* Yellow Sweet Corn, Canned, 1 can (12 oz)

* Goya Dark Red Kidney Beans, 1 can

* Baked Potato (baked potatoes), 1 potato (2-1/3" x 4-3/4")

* Del Monte - Diced Tomatoes w/Garlic & Onion, 1 can

* Sauce, Barilla Spicy Pepper Pasta Sauce, 1 cup


SPICES -- adjust to your own taste!!! :

- Goya Adobo with Cumin (it's the one with the green cap)

- Chili powder

- Ground Cumin

- Paprika

- Red Pepper Flake

- Kosher Salt

- Freshly ground Black Pepper

- Garlic

- Oregano

- Dehydrated Onion

Here is how you make "Kitchen Sink" Quick One Pot Chili:

Makes 8 servings!~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~Wash and dry the potato. Using a fork, poke holes in the potato to vent steam. Place the potato on a paper towel on a plate and put it into the microwave. When using a 1200 Watt microwave, set the timer 4:00 for a medium-sized potato. The microwave should stop before the potato is soft enough for eating and while it is still slightly firm deep inside. Dice the semi-cooked potato and set it aside.Cut your sirloin into little 1 centimeter cubes. These will give your chili great texture.Coat a large saute pan (I use a 3 quart -- so long as it's deep, it'll work!) with nonstick cooking spray (or olive oil -- your choice... just remember that oils add calories!). Brown your sirloin with your ground beef, adding your spices as you go. (Adding spices now will infuse the meats will great flavor!). Once the meats have browned (but before they're totally cooked through), drain out a bit of the fat that they've released. Add your beans, potatoes, corn, the tomatoes, and tomato sauce. Stir thoroughly, cover, and simmer for a minutes. This will allow the beans and potatoes to soften and the meat to finish cooking through.Stir again and taste -- now adjust the spices to your taste. Cover and simmer for another 5 minutes. I serve this in bowls with toppings on the side. Toppings include nonfat cottage cheese (my favorite -- and it's high in protein!!!), hot sauce, chopped onions, lowfat shredded cheese, red pepper flake, diced tomatoes, etc. Basically, whatever you and your family enjoy!This is also great to have with pita chips or baked tortilla chips.Number of Servings: 8Recipe submitted by SparkPeople user MELICHACHA.
