Hubby and I created this recipe when we were so broke that we didn't even have measuring cups. We measured the water with a baby bottle. The twins were babies and only dank formula. Being the new parents we were, we didn't have much in the way of good food. We were hungry so we hit the fridge and the cupboards and scoured the kitchen for ingredients. Thus the Po' Mans Chili was born. To this day, we still use a baby bottle and eyeball the measurements for the rest. Everything in this recipe is to taste. And taste it does! YUMMMM!!!

2 1/2-lbs hot italian sausage
1-large green bell pepper: diced
1-large red bell pepper: diced
1/2-Medium yellow onion: finely chopped
6-7 cloves garlic: minced
2 packets chili mix (Lawrey's or Durkee (West Coast) is best)
16-oz water (measured with baby bottle)
30-oz tomato sauce (2-15 oz cans)
12-oz tomato paste (2-6 oz cans)
10-oz A-1 Steak sauce
2-Tbsp Tobasco


How Do I Make Po' Man's Chili?

Here is how you make Po' Man's Chili:

Chop the onions, green and red bell peppers into small cubes. Mince the garlic. Add the chopped/minced ingredients to the tomato sauce, seasoning, tomato paste, and water in a large crock-pot. Start the crock-pot on medium or high (depending on the crock-pot). Cook the Italian sausage in a large skillet. Once the meat is cooked, add the A-1 and Tabasco sauce. Mix thoroughly. Add the sausage to the crock-pot. Let simmer on medium for 6-8 hours or on high for 4 hours minimum. Skim off the fat from the top and mix regularly if possible. The Chili can be left all day while at work if needed.
