10 cups of cooked ahead of time Dry Black beans, Red Beans & Pinto Beans (I don't recommend using cans because the sodium will go much higher)
1 pound ground Venison cooked & Drained
1 Whole large onion (212 grams)
2 Mushrooms (76 grams)
1/2 of a large Green pepper (107 grams)
1 small Can No Salt Added Tomato sauce
1 can Italian Style Diced Tomatoes (fresh tomato optional to cut down even more on sodium)
1 can
1 tsp of Chili Powder
Mrs Dash or other Salt free spices (season to taste , I added Italian seasoning, fresh ground pepper, Garlic powder, Parsley flakes)
2 Cup water

Here is how you make Chili -Made with Venison- Low Sodium:

Pre-cook your beans (following directions on bag) I cooked 3 1 pound bags of the beans (red kidney, pinto & black) then I took 10 cups of the beans after they were cooked to make this recipe (freeze leftover beans for other uses )Dice or Chop (or put in a food processor for time saving option) Onions, green peppers & mushroom.In a large skillet, brown 1 pound ground venison, drain as needed, when meat is nearly brown add Onions, Mushrooms & Green peppers, add chili powder and other seasonings continue cooking on med-high heat until no pink remains in meat. Drain again (use strainer so not to loose onions & such. Add Tomatoes & tomato sauce, and 2 cup of water cook on medium heat for 10-15 mins, Then add meat mixture to large pot with the beans, stir and let simmer for AT LEAST 20 mins or more before serving. (I let mine simmer for several hours )Hint-- Add more water if you'd like you chili more "soupy" or use less for a hearty chunky style chiliServing Size: Each serving is 1 cup.
