1/2 large onion, diced
5-6 cloves garlic, chopped
1 can diced tomatoes
1 can Rotel
Peppers (kind and amount to taste, negligible carbs)

5 tbs. Chili Powder
2 tbs. Cumin

Spices to taste (essentially no carbs)

Here is how you make Chunky Spicy 5 Carb Low Carb Chili:

Cook the roast the night before, let it sit overnight, then cut into 1/4 to 1/3 inch squares.Saute the onions and garlic.Add peppers now if you are going to use them. We use cayenne and serrano if available. Fresh jalapenos if not.Add and brown the beef and venison.Add the roast.Drain and add the tomatoes and Rotel.Add spices to taste. We use chili powder, garlic powder, cumin, salt, cayenne powder, ancho chili powder, etc.(At this point, I'd add some Dave's Insanity Sauce if my wife would let me. As it is, I just put it in my own bowl.)Simmer for an hour or so.If you can, let it sit overnight. 24 hours of letting the flavors meld transforms it into something even better.Add cheese and jalapenos to top.
