Web's Steakhouse Chili

This is a great lean chili that I make from leftover grilled steak. It is packed with protein and fiber and lower in sodium than most chili recipes. I use home-grown fresh peppers (3 jalapenos, 4 cayennes , 2 cherry bombs & 1 thai dragon) to season, but you can use a chili kit in a pinch. (Note - most of the chili packets add a TON of sodium.) I also used no sodium added tomatoes and Trader Joes Oragnic beans (drained & rinsed) to help keep the sodium down. The tomato paste helps to thicken the base. Use a fully can if you like it even thicker. I also like to add 1/2 - 1lb of sausage to the mix when I'm not worried about it being super lean. I like to serve my chili topped with grated cheese, sour cream & tortilla chips for dipping. (Not included in nutrtion info.) Play with the ingredients to suit your taste, but this is a great jumping off point.

Here is how you make Web's Steakhouse Chili:

-Cut the steak into strips aprox. (1/4"x1/4"x3/4")-Finely chop onion, garlic & hot peppers. (I used a Zyliss food chopper)-Sautee steak, onion, garlic and peppers for a few minutes then transfer to crock pot.-Add canned tomatoes and tomato paste.-Bring to a boil.-Simmer for 30 minutes.-Drain & rinse canned beans and add to crock pot.-Simmer for 2 hours or more.Note- Chili always tastes better after it is reheated, so I always make it a day or so before I'm going to serve it.
