1 29 oz Can Crushed Tomatoes
1 15 oz Can Dark Red Kidney Beans
1 Cup Frozen Corn Kernels
Salt, to taste
Pepper, to taste

2 Pkg Uncle Ben's Ready Rice, Whole Grain Brown
1/2 C Low Fat Cheddar Cheese, Shredded
3/4 C Reduced Fat Sour Cream


How Do I Make Corny Chili?

Here is how you make Corny Chili:

1) In a large pot, heat the olive oil over medium high heat, add the onions and peppers, saut?ing until soft. Add the garlic and saut? a bit longer.2) Add the ground turkey to the pan and cook, breaking it into small chunks as it cooks. Add the ground cumin, salt (if wanted) and pepper (if wanted) as the turkey cooks.3) When the turkey is fully cooked add the entire can of tomatoes and the can of red beans (along with the liquid), into the pot with the turkey.4) Stir and allow to come to a simmer (or low boil) and turn the heat down to medium-low. Add the chili powder, adjusting the amount to taste. Allow this to simmer for 15 to 20 minutes. In the last 5-10 minutes, add the corn and allow is to simmer a bit longer.5) Serve over brown rice and top with cheddar cheese and sour cream (if wanted)Serving Size:?Makes 6 Servings
