This recipe is from the original YOU: On a Diet book. I substituted low sodium kidney beans, which I drained and rinsed. The original recipe does not indicate rinsing, but because I have elevated blood pressure, if I don't feel like taking the time to soak dry beans, I usually rinse canned beans to eliminate some of the salt. I also removed the 1 tablespoon of olive oil. The fat from the turkey was sufficient. The turkey I use is 93% lean, but if you use a brand with a lower fat content or substitue vegetarian/tofu crumbles, you may need to add it back.
