1 chicken bouillon cube
1 beef bouillon cube
6 cups water

Part Two:
1 chopped onion
1 cubed zucchini
3 cups canned diced tomatoes
1/2 cup canned mushroom pieces
1 cup pureed pumpkin
1 T chili powder
3 T Tamari sauce (soy sauce)
1 T original Mrs. Dash
salt to taste

Part Three:
top with one serving Fritos (we like reduced sodium), a handful of scallions & 1 T vegan mozzarella cheese

Here is how you make Jen's Vegan Very Good Chili:

Cook 1 lb dried red kidney beans with 1 chopped onion (first sauteed in 1 T olive oil), and the bouillon cubes in a crock pot until beans are soft. Saute the other onion, adding cubed zucchini when onion is soft, together with salt to taste. Add canned tomatoes, mushrooms, mashed (or pureed) pumpkin, tamari sauce, mrs. dash & chili powder. Let simmer 30 min-1 hr.Serving Size:?10-12 1.25 cup servings
