1lb. dried red kidney beans
1lb. dried black beans
2 36oz. cartons of vegetable broth (preferably low-fat and/or low-sodium)
1 24oz. can diced tomatoes
2 24oz. cans crushed tomatoes
1 white or yellow onion, diced
2-4 jalepenos (optional), diced
2-3lbs. carrots, diced (I use the food processor for these)
1 bottle chili powder
salt
cumin
cayenne pepper
cinnamon
1tbsp. olive oil


How Do I Make Totally Vegan 4-Alarm Chili?

Here is how you make Totally Vegan 4-Alarm Chili:

Makes 1 very large pot of chiliInstructionsStep 1: The night before you want to make your chili, rinse the dried beans and put them on to soak.Step 2: The day of chili making, rinse your soaked beans again and cook them for about 90 minutes in well salted water. (The salting of the water is very important, as it will be impossible to make the beans properly seasoned after they are cooked)(If you have 2 pots, the next steps can be started while the beans are cooking)Step 3: Heat olive oil in large pot, add diced onions and jalepenos and saute for about 3 minutes until the onions are clear.Step 4: Add the carrots. The finer your carrots are diced, the better the finished product will be, and the more it will feel like chili. I use the food processor on its highest setting for about 30 seconds. It takes about 2 batches for 3lbs. of carrots. If you don't have a food processor, you can very finely dice your carrots.Step 5: Add your spices to taste. Stir the spices into the carrots thoroughly and allow to cook for about 5 minutes. (This is an important step because it allows the spices to bind to the carrots and really makes the chili flavorful when it is done.)Step 6: Add the vegetable broth and tomatoes and lower your heat to a simmer. Cover the pot and walk away for about 2 hours. The less you stir, the more the vegetables will carmelize on the bottom, and the yummier your chili will be.Step 7: Add the beans and stir well. Let the beans cook in the chili for another 10-15 minutes.If you're really hungry and just can't wait, go ahead, have some chili! However, I really prefer to put the chili up in tupperware and wait until the next day.
