This makes a LOT of chili. For proper cooking in a crockpot, reduce the amount of ingredients (for instance use 2 cups dry beans versus 3). Otherwise, you will be unable to add enough water to cook the dry beans properly.

3 cups dry beans any type or mix. Make sure beans are soaked before starting the chili (depending on the type of bean). You can also use canned beans, but adjust water volume or use more beans.

1 diced onion (used red)
2 diced red/orange/yellow bell peppers
1 diced serrano pepper (this only provided very mild heat. To up the heat, use a jalapeno or more serranos)

20 oz can of diced/stewed tomatoes
6 oz tomato paste

Seasonings done according to taste. Not all were added at the beginning. Rough proportions follow.
2 tbsp balsamic vinegar
2 tbsp cider vinegar
2 tbsp Worcestershire sauce
2 tbsp soy sauce
1-2 tbsp chili powder
1-2 tsp cumin
1-2 tsp dried oregano
1-2 tsp garlic powder

Here is how you make Almost Vegetarian Chili:

If using a crockpot, dump all ingredients into the crockpot. You can be conservative with the seasonings and add more at the end to taste. Fill crockpot with water and put on HIGH for 8 hours or more. If using a stockpot, brown onions and peppers first with some olive oil (note that this will add more calories). Then add the rest of the ingredients and several cups of water. Let simmer until the beans are done. Keep checking and adding water as needed.
