2 Tbs canola oil
1-1/2 cups chopped onion
2 cloves garlic, minced
1 cup of chopped green or red pepper (or a 1/2 cup of each)
3/4 cup chopped celery
1/2 cup thinly sliced carrots
1 15-ounce can red kidney beans rinsed and drained
1 15-ounce can garbanzo beans, pinto beans, or black beans (your choice!) rinsed and drained
1 14.5-ounce can of diced tomatoes with juice
2 8-ounce cans of low sodium tomato sauce
2 Tbs chili powder
1-1/2 tsp salt (adjust if you don't use low sodium tomato sauce)
1/2 tsp ground cumin
1/2 tsp ground cardomom (optional)
Water for thinning if desired.

Here is how you make Change of Pace Vegetarian Chili:

Heat oil in large Dutch oven. Saute onion, garlic, peppers, celery and carrots until just soft. Stir in beans, tomatoes and juice, tomato sauce, chili power, salt, cumin, and cardomom. Add small amounts of water to thin if needed.Bring to a boil, reduce heat, and simmer uncovered for 20 minutes or until flavors are blended.Freezes well.
