Soak beans for about 4 hours. I use the last hour to chop and prep all my vegetables. Drain beans, then add new water and boil for about 40 minutes. Drain again.Heat oil in a very large skillet. Cook all vegetables (no beans yet) until soft and fragrant. Take out of pan and set to the side. Put beans in hot skillet and stir in half of all the spices. Add water as needed to keep the beans from burning and to create a slightly paste-like texture. Once the beans start to show the paste texture add the vegetables back in. Add the rest of the spices to full chili.
