Brown mince (if using it), onion and garlic in a large pan or wok. Add all the veges, spices, water, beans and tomatoes. Simmer on a low heat for an hour, stirring occasionally to prevent catching. If using the crockpot, cook on LOW for 8 hours or HIGH for 6 hours.
