Heat oil in pan over medium-high heat. Add turkey and brown for 2 minutes. Add garlic, peppers, and onion and cook for an additional 3 minutes. Add crushed tomatoes and cook for 1-2 minutes. Add black beans, chickpeas, chicken stock, paprika, cumin, chili powder, chipotle sauce, and oregano. Stir to combine and bring to a simmer. Lower heat to medium-low and simmer for 45 minutes.
