The ingredients for Zucchini Chili are:

2 cups Zucchini sliced
1 can lima beans
1 can pinto beans
1 onion (med)
2-3 cloves of garlic
5 turkey pepperoni sticks
3/4 can colassal size black olives
1/2 cup sliced mushrooms
1/2 can V8 juice
1 tbsp beef stock concentrate or 1 cube
shredded cheese for toping


How Do I Make Zucchini Chili?

Here is how you make Zucchini Chili:

Fry onion and garlic in small amount of extra virgin olive oil (1 tbsp). until onion is translucent. Add turkey pepperoni sticks sliced in small rounds. Add zucchini and mushroom and cover for 2-3 minutes. Add olives, lima beans and 1/2 of the pinto beans. Mash or puree the other 1/2 of the pinto beans. Add V8, beef stock and pinto beans and stir until it is well mixed.
